These cookies combine Buckeye Brownie Cookies among the best of both worlds ... cakes and cakes! If you like cookies but do not take the time to drown them in chocolate, you'll love this simple cookie recipe!
Ingredients
- 1 box fudge brownie mix (19.5 ounce or family size)
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 large egg
- 1/4 cup butter melted
- 4 ounces semi-sweet chocolate chips
- 4 oz cream cheese softened
Instructions
- Heat the oven to 350 degrees. In a medium bowl, mix the brownie, butter, cheese and eggs. The dough will be a little sticky. Pour the dough over a non-frozen bread tray and make about 24 cookies. Fold each edge to form a circular cookie.
- In a separate bowl, mix the dried sugar and peanut butter until completely mixed. Form the mixture in about 1 inch balls. Make sure that you have one ball per cookie. Aside.
- Bake the cookie dough for 12 minutes, making sure that the cookies are not cooked or overcooked.
- Once the cookies are out of the oven, gently press the peanut butter ball in the middle of each cake. The peanut butter mixture will soften a bit, but that's fine. Allow cookies to cool for 5 minutes, then move them to a shelf to cool completely.
- Melt chocolate 4 ounces in a microwave bowl for 30 seconds. Move the chocolate and dissolve it for another 15 seconds or until the chocolate melts completely. Place about half a tablespoon of melted chocolate on each cookie so that it covers the peanut butter ball. Let the chocolate set. Store them in a sealed container.
