Raw Vegan Lime Cheesecake

The vegetarian cheesecake was one of the first raw food desserts I made when I began to delve into the world of healthy desserts. In the past, Cheesecake was one of the few desserts I enjoyed, so I was excited to explore the concept of vegetarian cheesecake.

Ingredients

  • 1.5 cup cashews, soaked
  • Zest of one lime
  • 2 tablespoons of maple syrup
  • 2 tablespoons coconut oil, melted
  • ½ cup coconut milk
  • ½ cup fresh lime juice
  • ½ cup of almonds
  • 2 tablespoons desiccated coconut
  • ¾ cup dates

Directions

  1. Soak the cashew nuts in cold water for at least 8 hours, but the night is the best
  2. Soak the dates in hot water for 15 minutes and drain the water before placing the food processor in it
  3. Add almonds and dried coconut to the food, with dates and pulse in a good grain
  4. Press the mixture in an 8-inch spring shape or individual smaller cans as you see in the picture. Push hard until it is pressed well and even. Place in the fridge to set. This can be done the day before
  5. Add the soaked cashews to the food record, along with lemon juice, lime, coconut oil, coconut milk and maple syrup, and mix well until the mixture is smooth and smooth.
  6. Pour the mixture over the base, then spread evenly and sprinkle with lime
  7. Store it in the refrigerator and get it 30 minutes before serving
